Fresh cranberries add a surprising burst of tangy sweetness and vibrant color to this simple seasonal sheet pan of roasted cauliflower florets. A combination of balsamic vinegar and maple syrup spiked with Dijon and garlic amplifies the berries' fruity, tart flavor and soaks into the mild, nutty cauliflower. And don't worry if you can't get your hands on fresh cranberries: Frozen, unthawed cranberries work just as well.
