Refrigerated precooked beets, often found in the produce section, are a timesaver, and when they're puréed and combined with creamy Greek yogurt, they make for a beautiful and flavor-packed dip. To turn this into a party-worthy appetizer, garnish with a handful of crunchy toasted nuts, punchy fresh herbs and flaky salt, then serve with crackers, chips, crudités or a combination. You can assemble this a few hours ahead, but know that the colors will bleed into each other the longer it sits.
